I purchased this knife as a Christmas present for my wife and asked your representative wether I should get the smaller or the larger knife, She suggested that since my wife has smaller hands the smaller knife would be better and that the representative had personally used the knife as a vegetable chopper and really liked it.
My wife is very happy with the Santoku and I tried it and found it to be great for cutting up onions and carrotts and celery. It is not to small for me and I have fairly big hands. It was money well spent! I thought long ago that my wife spent too much for the set she has but they are the only knives I want to use!
I will be a loyal customer as long as you keep making them in Olean, NY .. Made in the USA! It matters to me!

My husband says I have used the Santoku knife every day since I got it two years ago. It's definitely my favorite. The truth is I only use Cutco knives. I first saw them over 50 years ago when my parents bought several. Two of the knives I have in my collection are my mother's, and are at least 55 years old.

Sweet Knife
Have owned Cutco for years, but just acquired this one (petite santoku). The balance is fantastic, and of course, it's beautifully sharp.

My favorite knife-it dices like a dream.
This 7" Santoku knife is the latest addition to my Cutco collection--and I wonder why I waited so long to make this purchase. I would recommend it as one of the BASIC knives for anyone who does food preparation. The balance and the shape is simply wonderful--this knife 'rocks' --literally--over the cutting board as you dice or slice food. I can't do it as fast as those TV chefs--but I'm close to it now. It's so easy and fun to use!!

I will never use my old knives again. I purchased the 7" Santoku Knife with four other Cutco knives less than a year ago. The old knives never come out of the drawer anymore. I recommend them to anyone and everyone. You can't go wrong with the FOREVER Guarantee!

This is very sharp. It works well when chopping small vegetables. I wish I had bought the 7" as well.

Wow! The Santoku is a great knife.
I have acquired many Cutco knives over the course of 33 years. My favorite for over twenty years was my vegetable knife, but I must say that I really love the new Santoku. As I was accustomed to the larger -sized handle, the petite Santuko that I first ordered felt a tad small. so I gave it to my daughter (who LOVES it) and ordered the larger one! Thanks, Cutco for continuing to offer quality innovative products.

Wish it stayed sharp longer
I love my Santoku knife and have used it alot to give my Petite Chef knife somewhat of a rest. However, it hasn't stayed sharp even though I'm using it appropriately (on Cutco cutting board only to cut veggies). I have the sharpener for straight edge blades but that doesn't work very well. *SIGH* A bit disappointing.

Last August I purchased the two santoku set (7" and 5"). I have been using them heavily since they are my first Cutco knives. I am saving to purchase a chef's knife next.

Really love this knife. The edge has held up very well (I hone it every time I use it) and the handle feels great in the hand.

The knife works very well as far as cutting, but it says that it is dishwasher safe, and mine keeps rusting on the cutting part of the blade. Unless I dry it right away, which is not always possible, since I run my dishwasher at night, and let it run while I sleep, or on my way out the door for the day. So that makes it quite a pain to clean.

7" santuko knife
This has become my favorite knife. It feels balanced in my hand and does an excellent job chopping veggies in preparation for any meal. I have given this as a gift too.

perfect weight, I use this knife every day. I feel bad for my other chef knives that are just sitting in the drawer.

Good knife
I have had this knife (the smaller Santuko) for about 6+ months and have used it extensively, but although it feels good in the hand and has a nice feel when it's cutting, I have been disapointed in how it is maintaining it's edge. I only cut on wood or a white board and really expected it to maintain it's sharpness for at least a year. Quality is good, but if you use your knives a lot, expect to have to sharpen it or send it in for sharpening. I still pull out my lower price point knife that i am comfortable sharpening for things that need to be sliced. I think that maybe this knife could have a little more weight to it, but that would be simply my preference.

I have owned my Cutco knives for more than 20 years, collecting one at a time till I got all I wanted. Have sent them to be sharpened, and love that guarantee! The hardest part is waiting for them to come home; it's the longest wait to be without them, even for a day! I can't imagine using any other knives, at any price point.

When my daughter went to culinary school, she was given a knife set by the school. It wasn't even 2 months before she asked me to get her Cutco knives as a Christmas present! She gets occasional criticism from her professors for not using the "school" knives, but she doesn't care, she won't use anything else! It's a good thing we had them engraved -- she has other students constantly asking to borrow them!

a luxury but remember to be careful
These knives are so good, it is a pleasure to chop , dice & cut.

Only problem, I sometimes forget what I am doing and get a bit careless with my chopping. Yesterday I nipped the end off of my thumb by being careless. The knive is so sharp you must stay attentive.. the blade will not slide off your finger, it will go through it!

So much for chopping while watching the final 4!

Santoku 5" knife
I love the size and feel of this knife. It fits my hand perfectly and is great for quick jobs. I like the fact that I can control what I'm cutting, without fear of cutting myself with the knife. I find this knife an indispensable part of kitchen prep tools.
