I use this knife all the time...and not just for salmon. I use it to cut paper thin slices of ham and turkey for sandwiches and to cut perfectly shaped bite size pieces of feta cheese and mozzarella cheese from a block or ball of cheese. Salads and h'ors d'oeuvre and antipasto trays look so much nicer with smooth cut pieces. It's THE BEST for thin diagonal slices of salmon, flank steak and poached chicken breast and it easily removes the charred skin from any grilled fish. This knife is a basic kitchen necessity. It's right up there with the carving knife, vegetable knife and the butcher knife!
This is the best knife ever for cutting cooked meats! I've used it for ham, turkey breast, tenderloin, you name it. It doesn't shread the meat (which can happen with turkey breast using a serrated edge knife) but gives a nice clean slice. I have yet to use it for salmon or any other fish, but consider it one of the most useful knives in my jumbo butcher block.

Salmon knife
My 26-year-old son's favorite Christmas present. I later overheard him talking to someone about long-term use of knives, replacing them, etc., and he said, "This is a Cutco knife; I don't worry about any of that; it's good forever." And, several days later, someone was handling my French Chef knife and intimating another brand was better since this one isn't as sharp as his. I said, "And this one hasn't been sharpened in about 10 years." THAT made him rethink. Yay Cutco!!!!!!!

I PURCHASED A CUTCO KNIFE A LONG TIME ALONG. BECAUSE IT HAS LASTED AS LONG AS IT HAS, I WANTED TO TRY THE SALMON KNIFE. MY FIRST USE FOR IT WAS CHICKEN AND MEAT. THE KNIFE GAVE ME VERY FINE CUTS WHICH MADE THE MEALS MORE APPEALING. FINALLY, I TRIED ON A SLAB OF SMOKED SALMON. THE PIECES WERE UNBELIEVABLY THINK AS IF THEY WERE CUT BY A PROFESSIONAL. Beautiful knife

good fish knife
We do eat a fair amount of fish and have found it to be less expensive if I buy whole and cut it to size at home. The fish knife has made quick ork of loonger fish, and allowed me to slice paper thin pieces of gravlax.

We don't use this too often, cause we don't eat much fish. But it is a good quality knife like all the other CUTCO we have.
