butchering deer
My friends and I butcher about 12-15 deer annually. We completely debone the deer and remove anything but meat. It's a labor intensive project. I added a boning knife a few years ago specifically for that purpose. At the same time, I talked one of my friends into purchasing one. He is no stranger to cutco and has a set in his kitchen. These knives work so well for deer we are considering purchasing a couple more for our help.

Sharpest knife in the drawer
The most common sound from our kitchen during meal times since the purchase of our cutco knives is "I've been cut by the Cutco!"
We have resupplied our medicine cabinet with a new and larger group of Bandaids.
This knife is sharp - be careful!

Room for improvement
I was shocked that the boning knife was not hollow ground and very sharp, like all the other non-DD knives.
Another point: can I special order knives with the original "bowling-ball" handles. They do not melt if left on rim of a pot. I still have and use the original handles from my old DEMO set. They look like real wood after a few trips through the dish washer.
