Waited way too long!
I purchased most of my Cutco knives in 1990. Used at just about every home cooked meal since. Never been sharpened & even after 21 years, I still don't feel the need to send them back for service! I even take them to my parent's every holiday to carve the roast fowl or ham! I recently started hunting & also took up fishing again, dusting the rod & reel off after 19 years of storage! I went thru trying 3 moderately priced filet knives & wasn't happy with any of them as they all needed sharpened after each catfish... then I saw this boning knife at a Cutco table at a local fair & I just thought, "Well DUH!!!" I've been using my other cutco knives for butchering deer & wild fowl & I understand this will also work great for that task as well! I thought Cutco was overpriced when I first bought them but they have definately proved their worth & I am happy to rave about what a value they are! I own 6 kitchen knives, a set of 4 table knives & the peeler. I'll never purchase another brand of kitchen knife, & I am currently awaiting the arrival of all three sportsmens knives! & I'm pretty sure I'll be buying the salmon knife next.

butchering deer
My friends and I butcher about 12-15 deer annually. We completely debone the deer and remove anything but meat. It's a labor intensive project. I added a boning knife a few years ago specifically for that purpose. At the same time, I talked one of my friends into purchasing one. He is no stranger to cutco and has a set in his kitchen. These knives work so well for deer we are considering purchasing a couple more for our help.

Sharpest knife in the drawer
The most common sound from our kitchen during meal times since the purchase of our cutco knives is "I've been cut by the Cutco!"
We have resupplied our medicine cabinet with a new and larger group of Bandaids.
This knife is sharp - be careful!

Room for improvement
I was shocked that the boning knife was not hollow ground and very sharp, like all the other non-DD knives.
Another point: can I special order knives with the original "bowling-ball" handles. They do not melt if left on rim of a pot. I still have and use the original handles from my old DEMO set. They look like real wood after a few trips through the dish washer.

Boning Knife
The boning knife is a must have for anyone that likes to cook. I de-bone turkeys, lamb legs Chicken and it makes it so easy for a job that is otherwise a pain. The job is done much more quickly. The knife is so sharp you really have to be careful. The best investment for the kitchen. I love it.

Owning a Boning Knife seemed not for me
1 year ago, I picked out a special couple of knives to buy, my hisband said he wanted the boning knife. I KNEW I would never have a use for that one. I received this knife as a gift last Christmas. It has now been used for butchering/boning three deer, and still doesn't need to be sharpened. That's very hard use.

New Favorite
This is my newest Cutco knife and I love it. I didn't know it but my Dad sold Cutco knives as a young man (he is now in his 70's) and I watched him using a 50 year old boning knife and knew I had to have one. It is sturdy and still thin enough to make precise trimming cuts and stays sharp. A must have for all well stocked kitchens!

Best Boning Knife
I've purchased two of these knives, one for our family and one as a gift. It is a knife that removes meat from the bone with little effort. Boning a leg of lamb is especially difficult unless one has the right knife, especially since I like to separate all the muscle groups and remove as much fat as possible before marinating the lamb. This knife is the ONLY way to "go".

Fileting fish, slicing chicken, everything is a breeze. You'll never want to go back to using any other knife for such tasks. I especially like to make supremes of orange slices with the boning knife, cutting the fruit segments away from the pith and separating the sections from the membrances that enclose them. You can enjoy elegant things like these if you have this wonderful boning knife.
