simply WOW!!!
I have owned several knives and have NEVER had the quality like these! The knives first of all are made here in the USA and have a lifetime warranty no matter what. When I first was out of high school (88) I got a job with Cutco and sold the knives to friends and family. I still have the knives I started with over 20 years ago and when you see them side by side with my currents knives, you cant tell the diff.

Long Lasting
My mother purchased her set of Cutco knives and serving forks around the time of my birth. 55 years later, they perform like new.
We do have one, the French Chef knife, that we're sending in. Many years ago, it was used improperly and over the years one spot on the blade weakened. But given the number of years it has served daily and Cutco's half price replacement offer, Cutco is a great value and a great product.

Too many bad points
Given how much I paid for it I am really trying to like this knife. It just has so many things wrong!
Balance is off. (Way too tip heavy.)
Hollow ground. (Forces knife off to one side.)
Handle is too small. (In diameter, not length. Universal? I don't think so.)
Curve of the blade is not right. (Flat section is too large.)
Maybe many home cooks like this, I don't think you'll find a pro using it for long. I most likely will be returning it. (Forever guarentee is no good if it's forever in the drawer...)

Rust???
My knives are 3 years old. Just noticed Rust Pitting on my 7 5/8 Petite Chef. Both sides and Along Spine, both side of the blade Edge and where the steel meets the handle..I own several other Cutco Knives and this is the only one.. Sending it back..

Love the French chef (unexpectedly)
I always figured I would want the petite chef knife to fill that slot in my set, due to size and weight considerations. Not that I have tiny hands, but just for control. I ended up with the French chef, though, and I was very pleasantly surprised. I don't have any of the control issues that I thought I might, and I actually ended up appreciating the extra blade length. The blade is crazy sharp (as Cutco always is), and handles anything I ask of it. Slices through ripe tomatoes no problem.
I'm not a chef, just an enthusiastic home-cook. But I'm also a third-generation Cutco owner and wouldn't dare use anything else!

Get this out of my kitchen!
First off... I'm a Chef. I have used every kind of knife out there, from uber expensive Japanese steel to all the German stuff. Cutco has an off feel to it. No balance and the strange blade taper can make for blade wander during intricate cuts. The extra wrist effort required for consistent cut with this knife is fatiguing. The best bang for the buck is Mundial 5100 series.

Petite Chefs Knife
Well 17 years ago I purchased the "GINSU" set. Knives were sharp, did what I wanted. Went thru several moves, dishwashers, sinks, and alot of usage (daily). I went to a reps demo today and was completely stunned. He put my ginsu knives to the test. What took me 10 or more strokes to do anythng (cut thru a potato, leather, etc.) I did in 1 or 2 swipes with the chefs knife. So that means less work in the kitchen and with the guarantee I was impressed. I have always wanted a nice set and this knife was the taker of them all. My ginsu knives have moved to the back of the drawer and this one has moved to the front for my chopping needs.

my go to knife
This is my everything knife. Great for shaving, carving fresh, roasted or cold meats. I also enjoy using it for vegetable preparation. Although I have a great Cutco knife for bread, this one kept sharp is beautiful on buns. What can I say, it is my favorite knife, I am lost in the kitchen without it!

Most used knife in my collection
I grew up using Cutco knives. When I was in college I worked as a rep for Cutco and owned a demonstration set of 5 knives which I still own today almost 20 years later. I now own about 13 of the various kitchen knives, but still consider the French chef knife my favorite and most used knife in the collection. Some of the claims for this knife was a bit off-putting., such as it dulled too quickly, etc. So I feel I must defend the quality of Cutco products. #1. All knives (no matter what the quality or price) will eventually dull with use. Therefore, they must be sharpened on a regular basis. I suggest buying the Cutco knife sharpener for routine sharpening and sending it in every year or so for professional re-sharpening (to include DD-edge blades) at the Cutco plant. They do one heck of a great job and they will replace (for free) any knives that can't be sharpened. #2: These knives were not designed to cut through aluminum cans. They are to be used for cutting FOOD! If you want to cut aluminum then buy a cheap set of knives and destroy them instead, or buy tin snips. #3: Be sure that you are using an appropriate cutting board (ie. wood, polypropylene). Any material like glass, granite or other hard surface will dull any knife much faster than a cutting board.
I do not work for or own stock in Cutco, but feel I must set the record straight. Cutco is excellent quality and with proper care, maintenance and routine sharpening the knives will last a lifetime.

I cook from scratch almost every day and to have a knife that I can consistently depend on is a necessity. I have owned my Cutco knives for 10 years now and I am finally going to send them in for sharpening. I haven't needed to up to this point. I own the 9 inch Chef's knife, the 6 inch Carver and the Super Shears and I could not be happier. Thank you Cutco for making the last knives that I will ever need to buy!!

Not a chef's knife for a chef
The most upsetting thing is that this knife is not properly balanced. It is very blade heavy which makes for clumsy cutting unless you go very slow. In excitement of receiving this I chopped beets, carrots, potatoes, and mushrooms with this and my knife from JC Penny Cooks Collection ($75 for a 10 piece set) and while the cutco knife was better, not by much. The knife itself is pretty light for its size.
I also do not like the handle one bit. I'm a man and probably have bigger hands than most people using these knives. The taper in the back was most upsetting because I felt that the ring and fifth fingers couldn't be used to tightly grip and stabilize the knife. My thumb actually went numb the first night I used these... that has never happened from cooking before.
This set is going back.

Sharpest Knives Ever
WOW! Received the spatula spreader, trimmer and paring knife for Christmas, and couldnt wait to order more. I just received my petite chefs knife and 4 table knives the other day. I know the proper way to dice an onion, slice, plank, dice... well, Ive found I cant do that with my Cutco chefs knife! The knife was so sharp that it sliced directly through the root end of the onion while doing the "planks" and straight into my thumb!
While I love these knives, I will definitely be dicing my onions in a different manner from here on out. Great quality knives and sharpest Ive ever used!
Cant wait to continue adding to my collection.

Great Purchase
I've been using this knife for years. This one one was purchased as a gift. Our daughter and son-in-law already love it. (I just ordered another one for my husband and I so we don't have draw straws to see who gets the good knife when we're both in the kitchen.)

The knife I have is dated 1990 and I have only had to touch up the blade very lightly and is still very sharp. I use it for everything.

I got my knives as a wedding gift 40 years ago and they are wonderful!

Awesome Knives
Being an Army cook, I almost always use chef knives for any job, but since the army likes to buy cheap and useless knives I bought these for myself to use instead and they work wonders.
